Capcards
There are a couple of options for these:
*Squishy* ~ I have an ezcap which is pretty much easycap but for mac which I got off ebay. Most Capture cards do colour and sound but you have to check because some only do black and white unless you put your tv settings differently. I'm not an expert on cap cards but still come ask me any questions if you need help. I do reckon that the more expensive the cap card is the better the quality but easycaps do the job. Also I know that
Impulsez. got a cap card at Jb HiFi for about $50 but I never got around to finding it but it had very good
quality and sound.
RJ Aus ~ The JB Hifi capture card is the kaiser baas video to dvd maker. Between $50 and $79. Great quality, roughly equal to the easy cap. But for the price you may as well get an easy cap.
Setting up your CapCard
Alright, over the past 3 weeks i have gotten numerous PM's on how to set up a Capture card on a TV and not a monitor. So I am going to make a step but step setup.
The cap card I use is a blackmagic capture card for mac,

This is my capture card as you can see it has the input cables for a component
So what you are going to have to do to get your display on both your TV and your Computer is you are going to need some sort of splitter cables (as sown in image 2, 3)

Step 2
Now assemble to splitter cable and then plug it into your capcard (as shown in image 4)

Now plug in all of you XBOX cables into the Capcard and the splitter (as show in image 5)

but on the red and blue that you pug the splitters into leave one red and one white (as shown in image 5)

Now another thing may may need to buy (i found my 1 lying around the house) is a component cable (as shown in image 6)

And then with those plug the red and white ones into the two spots left in the splitter cables (as shown in image 5) Do so like this

Now with the other component cables that you plugged in run them to your TV (note this also works with turtle beach head sets)
I also Suggest getting a USB extender for your capcard as it makes it easier to plug into your computer
This is the final product.
My set up
All of this should set you back around $15-$20 and can all be found at a Dicksmith store

And also please note at the back of the xbox where your component cables plug in the switch has to be set to
TV
